VEGETABLE SAMOSAS
Traditional samosa pastry requires a lot of time and hard work
but filo pastry makes an excellent substitute and is readily available.
One packet will make around 30 samosas. They can be frozen before
or after frying.
Ingredients:
2 sheets filo pastry
1 large potato (diced and cooked)
2 tbls of peas.
2 tsp. of curry powder.
½
onion (finely chopped)
½
green chilli (finely chopped)
Pinch coriander (chopped)
Pinch mint (chopped)
½
tsp. of lemon juice.
Mix all the ingredients in a large bowl above except the pastry.
Using one sheet of filo at a time, cut into thirds giving you three
equal strips of filo.
Place 1tbsp of filling at one end of the strip and diagonally fold
the pastry to form a triangle.
Fill the other strips in the same way and then repeat with the other
sheet of filo.
Deep fry until golden brown and crisp.
Serve with tamarind chutney or raita.
